Here’s something easy for you to bake 🏻
. I made this in the morning and had it fresh for breakfast!
And so I also didn’t have enough time to have a muffin photo shoot before work, so this picture will have to do
Blueberry blender muffins
100g oats
Whizz in a blender until it becomes a flour. Place in a bowl and add:
1 tsp baking powder
1/4 tsp bicarb
1/4 tsp salt
1/2 tsp cinnamon
1/4 cup castor sugar or any sugar alternative (I actually tried xylitol castor sugar)
Add to the blender and whizz:
1/4 cup unsweetened almond milk
1/4 cup oil
1 egg
2 small very ripe bananas
1 tsp vanilla essence
Add the wet mixture to the dry ingredients and allow to rest for 10 minutes.
Fold in:
1 1/2 cups blueberries
Or you can place on top once you’ve poured the mixture into muffin cups until they 3/4 full.
I’m sure you can also substitute blueberries for any other fruit that you prefer.
