I’m always looking for a healthier way to enjoy pasta. And this one is a bonus since I’m not a huge spinach fan, but it actually tastes really good in here!
Spinach & Mushroom Pasta
Boil 250g of whole-wheat penne (or pasta of your choice) with salt and olive oil. Drain and set aside.
Sauté
1 onion, finely chopped
2tsp crushed garlic
1 tsp olive oil
Once the onions have softened add:
3 chicken fillet, cubed
Salt and pepper to taste
2 tsp green chutney
1 tsp crushed green chillies
1/2 tsp Italian herbs
1/2 tsp oregano
Cook until the chicken is done.
Then add
1 punnet of chopped mushrooms
And then 200g of spinach and cook until soft & wilted
For the white sauce
Warm 2 cups of low fat milk in a saucepan.
Mix 2 Tbsp cornstarch with 1/4 cup of milk to make a paste. Then add that to the warming milk and stir through for about 3-4 minutes until thick and cooked. Option to add in 1/4 cup of mozzarella cheese.
Add in the pasta and the sauce to everything else in the pot. Give it a good mix and enjoy
