Everybody loves a good pancake, crumpet, flapjack, whatever you want to call them! I think they are definitely fine to have once in a while as part of a healthy diet and made in a healthy way. Try this recipe out below. It serves 1, ideally making 2 pancakes.
Ingredients
70g whole-wheat plain flour
1 tsp. baking powder
½ medium banana, peeled and mashed
¼ cup (60ml) skimmed milk
½ tsp. vanilla essence
80g blueberries
Spray & cook/ Oil spray
150g low fat plain yoghurt
1 tsp. honey
Method
Stir the baking powder and flour in a mixing bowl. In a second bowl, whisk the banana, milk and vanilla essence. Pour into the dry ingredients and whisk until smooth. Mix in the blueberries and set aside for 10 minutes to rest.
Heat a non-stick frying pan and spray lightly with oil spray. Pour a ladleful of the batter into the pan. Cook for 2 minutes until bubbles rise to the surface and the bottom is golden brown. Use a spatula to flip and cook for another 2 minutes until golden brown. Repeat with the remaining batter and make 2 pancakes in total.
To serve, top with yoghurt, a few blueberries and a drizzle of honey. Enjoy!
