1 tsp chia seeds
Salt and pepper to taste
1 tsp olive oil
1 small handful baby spinach leaves
1 tsp chopped green chilli (optional)
½ medium tomato, diced
20g reduced fat cheddar cheese, grated
2 slices whole wheat low GI bread [mkdf_accordion_tab icon_pack=”” title=”Method”][vc_column_text]
Whisk eggs, chia seeds, salt and pepper together in a small bowl. Heat oil in non-stick frying pan over medium heat. Pour the egg mixture and swirl to cover the base of the pan. Cook for 1-2 minutes while the egg starts to set and the underside is golden in colour. Reduce the heat to medium-low.
Sprinkle the spinach, tomato and cheese over the omelette. Cook for 1 minute until the egg is set. Fold in half to cover the filling and transfer to plate.
Toast bread to your liking. Serve omelette with toast.
