Makes about 6-8 muffins and I made the mixture using only my Nutribullet!
1/4 cup plain low fat yoghurt
2 small carrots, grated
1/2 cup oat flour (just blend regular oats till it’s fine)
1/2 cup chocolate protein powder (60g)
3 Tbsp cocoa powder
1 tsp baking powder
Pinch of salt
1 egg
1 tsp vanilla essence
3 Tbsp honey
- Preheat oven to 180 degrees Celsius
- Blend carrots and yogurt until smooth
- Add the dry ingredients and then the rest of them until it’s all well combined
- Grease your muffin tray and pour in the mixture evenly
- Bake for about 25-30minutes or until slightly soft

Not too bad for a lockdown snack don’t you think?
