Here is a recipe for a healthier version of creamed spinach using yoghurt.
2 tsp olive oil
2 cloves of garlic, minced
4 cups of chopped spinach
1 cup of plain low fat yoghurt
A pinch of salt and pepper
- Place olive oil in a pan on medium heat and add garlic and spinach
- Cook for roughly 10 minutes or until spinach cooked through
- Turn down the heat and add the yoghurt, mix through and leave on low heat for 2-3 minutes stirring occasionally
- Season with salt and pepper
