If you like dark chocolate and deep roasted coffee flavours, this will be the perfect treat for you.
1 cup dates, pitted and chopped
2 tsp instant coffee dissolved in ¼ cup of water
2 Tbsp. cocoa powder
2 Tbsp. ground almond powder
½ cup chopped nuts of your choice (I used pecans)
1 tsp vanilla essence
Desiccated coconut, to coat
Whizz all the ingredients, except the coconut, together in a food processor or with a stick blender. Place mixture in the fridge for about 30 minutes to allow for easy shaping. Form into balls (sizes depend on you although bite size is always good for a treat). Dip and roll into coconut to evenly coat the outside of the balls. Eat straight away or store in an airtight container in the fridge for later.
