

Get a “fresh” start to the day with this zingy overnight oatmeal.
Ingredients (serves 1)
60g rolled oats
125 low-fat milk
50g low-fat plain yoghurt
1 tsp finely grated fresh ginger
½ a large peach, diced
15g walnuts/ almonds, roughly chopped
Method
Place oats, milk, yoghurt, peach and ginger in a bowl and mix until well combined. Pour mixture into a jar and cover with cling wrap. Place in the fridge and chill overnight.
To serve, stir the oats and sprinkle over nuts.
