2 Tbsp olive oil
1/2 bunch coriander, finely chopped
3 garlic cloves, minced
Lime juice (from 2 limes)
A pinch of salt and pepper
1/2 tsp chilli flakes (optional)
4 skinless chicken breasts, cubed
1 red pepper, cut into squares 2 cm x 2cm
1 yellow pepper, cut into squares 2 cm x 2cm
1 red onion, cut into wedges and separated
2 baby marrows, cut into wedges 2cm x 2cm

Method
- Mix olive oil, coriander, lime juice, garlic, salt, black pepper and chili flakes (optional) together in a bowl and add cubed chicken
- Marinate chicken in mixture for 30 minutes
- Cut peppers, onion and baby marrows into pieces (approximately 2cm x 2cm)
- Alternate chicken and vegetable pieces onto skewers
- Arrange on a griddle pan or cook over a braai. Alternatively, arrange on a baking sheet and place under a pre-heated grill in the oven
- Cook for 3-4 minutes on each side or until chicken is well cooked throughout
Serve with brown basmati rice, and a green salad.
