2 large sweet potatoes, cubed
30mls low fat milk
1 Tbsp olive oil
1 large onion, diced
3 cloves of garlic, minced
2 tsp chilli flakes (optional)
1 carrot, diced
500g extra lean mince
2 x 400g cans of italian tomatoes
1 tsp dried italian herbs
1/2 tsp salt and pepper
Method
- Boil sweet potato in water until soft.
- In a large pot add olive oil, onion, garlic, chilli flakes, and carrot and cook until soft
- Add mince and salt/pepper to taste and cook until brown, stirring occasionally
- Add the canned tomatoes and simmer for 15minutes
- Add dried herbs and simmer for another 5 minutes
- Place mince sauce in an ovenproof dish
- Mash the sweet potato adding a little milk until smooth
- Layer the mashed sweet potato on top of the mince sauce
- Place in a preheated oven for 10 minutes until top is slightly brown
- Serve with a large green salad
