How about a portion of Edamame Beans! (pronounced Ed-ah-mah-May)
They are immature green soybeans still in their pods but are nutritional gems that are tasty and fun to eat. In just 1/2 a cup, you can expect to get about 10g protein. Plus they are low in calories and high in fiber to get you feeling full!
Here’s a delicious recipe you can try inspired by @thebig_mouth. Since we can’t go out, we gotta make it happen at home .
Ingredients
1 cup edamame beans
Olive/sesame oil
1/4 tsp Chinese five spice powder
1/4 tsp red chili flakes
Salt to taste
1 Tbsp soy sauce
1 Tbsp teriyaki sauce
2 tsp honey
Method
Boil the edamame beans, drain and place in cold water.
To make the sauce, heat the oil and add the rest of the ingredients until it comes to a rapid boil and thickens.
Toss the boiled beans in the sauce until they are well coated.
Place on an oven tray to grill until slightly charred.
To serve, sprinkle with some red chili flakes and a bit of sea salt.
So yum!
