Ingredients
Savoury Muffins (makes 12)
1.5 cups whole-wheat flour
1 Tbsp baking powder
120g baby spinach, chopped
150g carrot, grated
100g sundried tomato, chopped
80g low fat feta, crumbled
2 eggs
1 tsp of paprika
1/2 tsp of salt & pepper
1 tsp @krea_sa egg spice
180ml low fat milk
30ml olive oil
Method
Preheat oven to 180 degrees.
Lightly spray muffin tray.
Sift flour and baking powder (remember to add the wheat that doesn’t pass through for extra fiber)
In a separate bowl whisk eggs, milk, oil & spices. Pour into dry ingredients and fold to combine. Add in the prepped veg and 60g of feta.
Spoon into muffin holes and crumble the rest of the feta on top.
Bake for 15-20mins.
