Here’s some healthy comfort food for this wintery weather..
Marinate:
4 chicken breasts, cut into strips
1 Tbsp of Peri peri chicken spice (I used Calisto’s one)
2 Tbsp Nando’s sauce (I used medium coz I’m a pansy like that)
1 Tbsp lemon juice
1 tsp paprika
Salt & pepper to taste
I marinated this overnight.
The sauce:
Heat this up in the microwave for a few mins
4 Tbsp Nando’s sauce
2 Tbsp plain fat free/low fat yogurt
1 Tbsp olive oil
Fry the chicken strips on a non-stick pan (2-3 mins a side) and baste them with the saucy sauce.
Boil some basmati/ brown rice with some salt, turmeric and a stock cube.
Sauté:
Diced onion, carrot & robot peppers with a tsp of olive oil. Add in some chili, garlic, paprika and pepper to taste.
Add the veggies to the rice after it’s strained.
Place the spicy rice in a bowl and put the saucy strips on top and voila, chicken strips & rice
