¼ small red onion, finely chopped
1 tsp ground green chilli (optional)
A small handful parsley, finely chopped
Salt and black pepper, to taste
A small handful mixed lettuce leaves
Finely grated zest and juice of ¼ lemon
1 whole wheat wrap
2 Kalamata olives, pitted and sliced
3 cherry tomatoes, quartered [mkdf_accordion_tab icon_pack=”” title=”Method”][vc_column_text]
Place the tuna, onion, chili and parsley in a small bowl and mix until well combined. Season with salt and pepper (optional). Place the lettuce, lemon zest and juice in another bowl and toss gently to combine.
Place the wrap on a serving plate with tuna mixture, lettuce, olives and tomato down the middle. Fold over and roll up to enclose filling.
