Enjoy this healthy & refreshing Avocado salad. This recipe makes 6 servings.

Salad
2 cans black beans
2 avocados, cubed
2 cups corn
2 cups cherry tomatoes, halved
1/2 cup red onion, diced
1/3 cup chopped coriander
2 cups salad greens (lettuce, spinach)
Dressing
1/3 cup lime juice
3 Tbsp olive oil
2 Tbsp coriander
1 tsp honey
1/4 tsp cayenne pepper
1/4 tsp salt
1/4 tsp black pepper

Place all salad ingredients in a bowl (except avo) and toss well
In another bowl mix the lime juice, olive oil, cilantro, cayenne pepper, black pepper and salt
Mix dressing into salad and add avocado. Take care not to mix too much after adding avocado as it will become mushy. If making to store add avocado just before serving.
